Buttermilk Pancakes with Rhubarb Compote
While I’m in Austin for a bit, eating my weight in pancakes at Magnolia Cafe and Kerbey Lane, please make these and think of me. The rhubarb compote is entirely optional here. If you’ve never tried green rhubarb, I urge you to make this. I find green rhubarb to be more floral and less sour than the red variety. This compote tastes very similar to applesauce, but with a little more tartness.
Buttermilk Pancakes with Rhubarb Compote
Makes 4 small pancakes, about 8″ each.
Ingredients
Buttermilk Pancakes:
- ½ cup unbleached flour
- ½ cup whole wheat flour
- 2 teaspoons baking powder
- 2 tablespoons sugar
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter (plus more for greasing griddle)
- ½ teaspoon vanilla
Green Rhubarb Compote:
- 2 cups chopped green rhubarb (from 3 thick stalks about 8-10” long)
- ¼ cup sugar
- 1 cinnamon stick (or ground cinnamon to taste)
- ground allspice to taste
- ½ teaspoon vanilla extract
Instructions
- Heat your griddle over medium heat and grease it with butter.
- To make the pancakes, begin by stirring together with a fork the flours, baking powder and sugar in a medium bowl.
- In a 2-cup measuring cup, stir together the buttermilk, egg, melted butter and vanilla.
- Pour the wet ingredients over the dry ingredients and stir lightly to combine. Lumps are just fine.
- Use a ⅓ cup scoop to scoop pancake batter and place it on the griddle. Cook until bubbles form on the tops of the pancakes and the undersides are brown. Flip and cook until brown.
- For the compote, stir together all ingredients except vanilla in a medium saucepan. Bring this mixture to a boil, then lower to a simmer. Cook, stirring occasionally, until the rhubarb collapses into a sauce that resembles apple sauce—about 15-20 minutes. Stir in the vanilla just before serving













Yum! I have never thought to have rhubarb with pancakes. I love this idea!

Oh man, you just had to go there. I miss the Magnolia pancakes SO much. Not as much as I miss the mag mudd with a brownie a la mode though….. after being in Alaska for the last 3 years I will be in Austin on Saturday and might have to order EVERYTHING to bring home in little to go boxes, ha.
Mags doesn’t have rhubarb compote though, sounds delicious!
