Dinner for Two: Mediterranean Pasta {vegetarian}

Mediterranean-Pasta-6

This might be a bit embarrassing for me, but I’m sharing with you the meal I eat most.  This is my single girl supper.  It’s nothing fancy or complicated.  I never tire of it; any chance I get to make this meal, I do.  My husband claims to not like pickled or briny flavors, and this pasta is chock full of pickled vegetables.  I make it when I’m alone, and I enjoy it alone.  It’s a vegetarian masterpiece, if I say so myself.

It begins with sauteed golden brown mushrooms and garlic, and ends with juicy sundried tomatoes, green olives, and artichoke hearts in a white wine sauce.  The best part is that you’ll have the rest of the wine to enjoy with the meal.

    I absolutely love knowing what someone’s “single girl supper” is! It’s amazing what flavors, indulgences we all have when we’re alone. This is a great one, Christina!

    The meal you eat the most looks amazing! Definitely a dinner I can whip up any night of the week and have for delicious pasta leftovers. I’m sold. P.S. I LOVE how big your comment box is! It makes me feel like I’m part of a Dessert For Two community circle. Hey guys, how’s it going?? ;)
