There are, yes, 26 recipes total in this ebook, and one of them is the classic pumpkin pie with coconut milk instead of evaporated milk! It’s made in a deep-dish pie crust, and I make it exactly twice a year and have for a very long time.
I love having all of these recipes in one place because my pumpkin desserts for two almost never use an entire can of pumpkin (the exception is my full-size pie with coconut milk that is in the book!).
Normally, my recipes are small scale, so we only use a small portion of the can of pumpkin. Anywhere between 2 tablespoons for a pumpkin snickerdoodle recipe to 3/4 cup for a pumpkin cake recipe.

And because I know this question might come up, I will answer it ahead of time: I tested everything with canned pumpkin puree. Not canned pumpkin pie filling, and not fresh homemade pumpkin puree. I’m sorry about that, but I found it’s best for recipe testing purposes if we all use the same can of pumpkin. Your homemade pumpkin puree might be drier than a canned version; there’s no way to tell.
The brand of canned pumpkin that I personally use is Libby’s, but that part isn’t too important. Use your favorite brand in all of these recipes.
