I don't often admit my shameful eating preferences, so lean in and listen up. I love Star Crunches. You know what I'm talking about---the round chocolatey crispy things laced with caramel made by that little bitch named Debbie?
Debbie ruins swimsuit season for me every year. I will get her back one day, if it's the last thing I do.
When I was growing up, my house had a serious lack of junk food. I'm happy that my Mama refrained from it for the most part, but I think we all know what happens when you raise a kid without sugar...she goes on to write 3 cookbooks all about desserts.
I'm positive there's a correlation.

Anyway, I should really apologize to you for making these chocolate rice krispies treats. They taste just like a Star Crunch (and even more so if you drizzle them with caramel). I'm so shamelessly addicted to them, and worse: my husband is off sugar right now.
What I'm trying to say is, I ate the whole pan. In three days. I convinced myself that they wouldn't freeze well, and therefore, the only logical thing to do was just keep eating them.
And yes, I first made this recipe in a bread loaf pan to make two servings (easy to do if you wanna, just cut the recipe in half), but after one taste, I was like 'NOPE. GIMME A WHOLE PAN.'
I'm the literal worst around homemade junk food.
So, make these as they are written, top with sea salt and dig in. Or, drizzle with caramel (and then sheepishly sprinkle with sea salt because you're a lush and you should be ashamed of yourself. And then please call me and confess so I can feel better about my own eating habits. Thanks).

Chocolate Rice Krispies Treats
Small batch rice krispies treats made with chocolate and sea salt.
Ingredients
- 4 tablespoons unsalted butter
- 10.5 ounce bag of mini marshmallows (5 ½ cups worth)
- ¼ cup unsweetened cocoa powder
- heaping ½ cup chocolate chips
- 5 cups rice krispies cereal
- ½ teaspoon sea salt (optional)
Instructions
- Line a 8x8 baking dish with parchment paper or foil (or spray it very well with cooking spray).
- In a large pot, add the butter, marshmallows and cocoa powder. Turn the heat to medium high, and melt while stirring continuously. The mixture should become one sticky, gooey mess. Delicious!
- Stir in the chocolate chips until melted.
- Add the rice krispies cereal to the pot one cup at a time, and then stir, stir, stir. It'll be sticky and messy. You're doing it right!
- Press the warm gooey mixture into the baking dish, using buttered hands to flatten it evenly.
- Sprinkle the sea salt on top, and then let rest for 2 hours before cutting (yeah, right).

My husband's grandmother made the best rice krispies treats. She sandwiched a decadent blend of caramel and sweetened condensed milk between two layers of "normal" rice krispies treats. I have yet to make the consistency right, and she never wrote it down. "A bag of caramels and a splash of sweetened condensed milk, melted together" was all she divulged. Every time I made it, she would have a little different trick, but none of them worked. It's not just that I am an in-law, her own daughters and granddaughters were never privy to the secret either! Too little milk, and you couldn't bite through the sandwich. Too much milk, and it seeped that sweet caramel goodness through the bottom layer. Tasty, but not what we are going for. Why am I telling you this? Because if you can figure out that perfect combo, we can sandwich it between this heavenly chocolate rice krispies concoction. Then, we can both say goodbye to that little bitch Debbie and hello to our own homemade star crunch.

I doubled this for a 9x13 because that's how I feel about Rice Krispies treats, and I ended up accidentally adding twice as much cocoa powder as I was supposed to. It was STILL SO GOOD! Like, problematically addictive. Note: the sea salt is a must. Just the perfect little bit of salt to cut the sweetness.

There is definitely something off in this recipe. You have cocoa which makes it a bit thick. I think it should be 1/2 cup of butter. By the time the butter melts and the cocoa is added and the marshmallows it’s to thick and you can’t stir into your Rice Krispies. I cooked on low it did not bubble.

I've tried several variations to this recipe except for melting in chocolate chips. I have to try this. Cocoa Crispies are okay version but by far my all time favorite is using Fruity Pebbles. For some it's too over the top on sweetness and for those I will.mix ½ regular Krispies and ½ Fruity Pebbles. And various other cereals work well too.

The video is for the loaf size pan but the written recipe is for the 8 x 8 size pan. A bit confused at first when I was double checking the ingredient list.

Absolutely correct, Joanne. I'm sorry about the confusion! I usually make my videos months (or sometimes years) after I post the recipe, and I've found that most people make this recipe small batch in a loaf pan, so that's why I did the video that way. But yes, the recipe card in the post is for the 8x8" pan, but the video shows a 9" bread loaf pan of treats. Thanks for catching this :)
