Lately, my side dishes have been boring.  It’s like I’m on repeat in the kitchen:  grill 1 bunch of asparagus, spritz with lemon and divide between two plates.  Or, saute a few slices of bacon, add a small bag of frozen peas, and divide between two plates. I needed something new and different.  I wanted potato salad or pasta salad, but all I could find were recipes that served 6 or more people.  I love a good scoop of potato salad, but I don’t want to eat it for days!

Enter this Creamy Greek Pasta Salad with the best dressing I have ever tasted.  If you make nothing else, MAKE.THIS.DRESSING.  It tastes like the creamy Italian dressing at Olive Garden, but instead, it’s healthy with pronounceable ingredients.  It’s low calorie, too!  (Did I really just tout a low calorie recipe on a dessert web site?)  The dressing only has 1 tablespoon of olive oil;  it relies on creamy Greek yogurt to form the rest.  So good, so guilt-free.

This dressing has made me get back into salads.  We’ve been eating many more servings of salads once this dressing came into our lives.  Bikini season, here we come!
