    Dinner for Two: Apple-Wrapped Salmon with Bacon Hash

    Apple-Wrapped-Salmon-Bacon-Hash-1a

    Do you need an impressive, romantic meal for two for the holidays?  All I want for Christmas this year is a quiet meal before the hustle of the holidays begin.  I think Christmas Eve is the perfect day for a slow drive to look at Christmas lights, a couple of mugs of hot chocolate, and a meal full of bacon.

    This salmon is brushed with Dijon mustard, wrapped in apple slices and baked.  It couldn't be easier.  While it bakes, dice the bacon and cook until crisp.  Stir in your cabbage or Brussels sprouts and cook until wilted.  The two go together perfectly, just like your sweetheart and a sprig of mistletoe.
