Spicy turkey burgers with creamy feta sauce on top!
Let's talk about your grill skills for a hot minute. It just took all my effort not to type 'grill skillz.' If I have your cell phone number, you know all about my texts with proliferous z's. Sorry.
Moving on!
Are you excited for grilling season? Do you like to cook outside just to keep the heat out of your house? Are you a grilling aficionado that pines for summer all year long? Do you hoard charcoal? Are you my redneck neighbor behind me in the woods who grills ALL meals outside whilst blaring 80s rock ballads?
The way I see it, the grill offers a component to your food that just can't be accomplished when cooking indoors: smokiness. Food likes to be smoky. Let's think about a hot dog with some black char from the grill versus a hot dog boiled in water. Are you with me? The two cannot compete. You could sear a burger in a cast iron skillet indoors, but to really get the char on the outside to seal in the juices, your smoke alarm will go off. Trust.
Personally, I'm a turkey burger aficionado. I think I've made every burger Jessica has ever posted. I love them all. This one with Gorgonzola and chili slaw made me sing. Consider my fiery turkey burgers with creamy feta sauce a riff on her recipe.
I jam-packed the turkey meat with spicy flavor: smoked paprika, cayenne, and oregano. I stuffed it on an onion-flecked burger bun (the stuff of my dreams). Then? I made your taste buds a cooling, creamy feta sauce just in case the heat was too much for you. However, I flubbed and dashed some cayenne in the feta sauce too, but it was an accident...unless you crave the burn.
Do food bloggers really eat what they cook? OH YES.
Sometimes, I finish the photo shoot, pull up a chair, and rest my elbow on the remote control shutter while I chow down. I suggest you do the same.
Also suggested: homemade brioche buns to go with these burgers!
Makes 3 burger patties or 2 large ones. I call this 'dinner for two' because most men gobble up two of these spicy burgers. Plus, it uses the entire 1-pound package of ground turkey. If you really only want to make 2 burger patties, use ⅔ pound of turkey and 1 egg yolk. Looks beyond yummy! Can I leave the egg out? Will it change the whole dish? Or any substitution? Thanks :)
Christina Lane says
Sure thing! Just substitute 2-3 tablespoons of olive oil instead :)

YES! I love turkey burgers, but they do need a lil' something to keep things interesting. Creamy feta? NAILED IT!

I just want to perch atop that burger and eat from the top down. Is that weird? I don't even care!

Haha, I adore your note about most dudes eating two burgers. Definitely how it goes around here. ;-)

These could not look more delicious and the feta takes them over the top. I end up sneaking bites during a photo shoot!

I have to confess, as much as summer is grilling season to me, I ended up grilling all through the winter this year. And you know what? Totally loved it. Cannot wait to try these burgers -- they sound incredible.
