Spicy turkey burgers with creamy feta sauce on top!
Let's talk about your grill skills for a hot minute. It just took all my effort not to type 'grill skillz.' If I have your cell phone number, you know all about my texts with proliferous z's. Sorry.

Are you excited for grilling season? Do you like to cook outside just to keep the heat out of your house? Are you a grilling aficionado that pines for summer all year long? Do you hoard charcoal? Are you my redneck neighbor behind me in the woods who grills ALL meals outside whilst blaring 80s rock ballads?
The way I see it, the grill offers a component to your food that just can't be accomplished when cooking indoors: smokiness. Food likes to be smoky. Let's think about a hot dog with some black char from the grill versus a hot dog boiled in water. Are you with me? The two cannot compete. You could sear a burger in a cast iron skillet indoors, but to really get the char on the outside to seal in the juices, your smoke alarm will go off. Trust.
Personally, I'm a turkey burger aficionado. I think I've made every burger Jessica has ever posted. I love them all. This one with Gorgonzola and chili slaw made me sing. Consider my fiery turkey burgers with creamy feta sauce a riff on her recipe.
I jam-packed the turkey meat with spicy flavor: smoked paprika, cayenne, and oregano. I stuffed it on an onion-flecked burger bun (the stuff of my dreams). Then? I made your taste buds a cooling, creamy feta sauce just in case the heat was too much for you. However, I flubbed and dashed some cayenne in the feta sauce too, but it was an accident...unless you crave the burn.
Do food bloggers really eat what they cook? OH YES.
Sometimes, I finish the photo shoot, pull up a chair, and rest my elbow on the remote control shutter while I chow down. I suggest you do the same.

Just curious. Are you supposed to heat up the feta sauce do the cheese melts, or just mix it as stated in recipe? Thanks.

Great question! And sorry for any confusion. I just pile the feta sauce on the burger before serving because the burger is hot and the sauce is cold. I like the hot-cold combo, but you could do whatever you like, too :) happy grilling!! -Christina

Is it weird that I kind of want to bathe in that creamy feta sauce? Because I do. Man! I could eat that stuff on everything. Bland turkey burgers are my biggest pet peeve. Your recipe looks perfectly seasoned.

I love to grill so much and thankfully I live in sunny Arizona where every season is grill season! It also helps to get the heat out of the kitchen when it is over 100 degrees outside! You are so right, it just gives things so much more flavor when you grill them. I love a good turkey burger, and that feta sauce, so yummy!
