We're making fresh peach puree in the microwave today---it's easy peasy. I tossed in a little fresh ginger into the cupcake batter last minute, and I loved it even more.

This looks amazing but there is a small mis-direction in the frosting: "To make the frosting, beat together the remaining 1 tablespoon of peach puree with the powdered sugar." This doesn't mention the butter in the ingredients list.

Hi Mike, great question! Try the stove-top. Cook until it gels together, probably 4-5 minutes on medium-low :)

hi christina: love your site. i promised birthday cupcakes to my boyfriend this weekend, who has requested yellow cake with buttercream. would it be possible to make a yellow cupcake using this recipe and replacing the one egg with two yolks? or is there something else you would recommend?

I wouldn't switch up the ingredients. There are so few ingredients in the first place that I think changing the egg would make it too dry. Plus, this recipe has peach puree in it. I would make my champagne cupcakes instead (recipe here: https://www.dessertfortwo.com/2011/12/champagne-cupcakes/) If you make chocolate frosting, I doubt you could taste the champagne in the cupcake. Leave out the almond extract and orange zest, of course. Use vanilla extract instead. That is the 'yellow-est' cupcake on my site. However, I am going to work on a plain yellow cake + chocolate frosting recipe ASAP! :)
