I’m sooooo close to turning off all electronic devices and relaxing this entire weekend and enjoying our huge family event. If you didn’t read in my berry swirl s’mores post, we’re getting our little Camille baptized this weekend, and we have so many family members in town for the event! For two people who’ve lived away from family for so many years, these weekends are what we live for. I’m making vats of banana pudding, barbecue is on order, and our Tex-Mex buffet is set to go. I think I’m going to fall face first in a bowl of guacamole.
Anyway, I’m going to keep this short and sweet. It’s hot. You need lemonade. It’s a holiday weekend. You need moonshine. You with me?
It’s a stick-up! (Get it? Sorry.)
For the simple syrup:
- 1/4 cup granulated sugar
- 1/4 cup water
- zest of 1 large lemon
For the popsicles:
- 1/4 cup freshly squeezed lemon juice
- 2 tablespoons moonshine
- 3/4 cup cool water
- In a small sauce pan, combine the sugar, 1/4 cup water and lemon zest. Bring to a simmer, stir until the sugar is dissolved. Remove from heat and let cool.
- Then combine the simple syrup with the lemon juice, moonshine, and remaining cool water.
- Pour into popsicle molds and freeze until firm.
