This roasted acorn squash is the perfect side for Thanksgiving.

Slice the acorn squash in half, and scoop out the seeds. Slice it into rings next.

Whisk together the vanilla bean paste, brown sugar, salt, and olive oil.

Brush the mixture all over the squash.

Roast, flip each ring, then roast again.
