Made with fresh bananas in a quarter sheet pan!

In a large bowl, whisk together the 1 C. flour, 1 C. sugar and 1/8 t. salt.

In a separate bowl, whisk together the 1/4 C. melted butter, 1/2 C. buttermilk, 1 egg white, 1 C. mashed banana, 2 t. vanilla bean paste, 1/2 t. baking soda & 1/4 t. nutmeg.

Pour the banana mixture into the bowl with the flour, & stir until everything is combined. Pour the batter into the prepared pan and bake for 18-19 minutes at 350° F.

While the cake cools, make the frosting: beat together the 5 oz. cream cheese, 2 T. butter & 1 T. vanilla bean paste. Slowly add the powdered sugar while mixing.
