Chocolate Covered Strawberry Cupcakes
Small batch makes just 4 cupcakes!
1/3 cup flour 2 tablespoons cocoa 1/8 teaspoon baking soda 1/4 teaspoon baking powder 1/2 teaspoon espresso
1/3 cup sour cream 4 teaspoons oil 1/2 teaspoon vanilla 1/4 cup brown sugar
Preheat the oven to 350F. Whisk together the flour, cocoa, baking soda, baking powder, and espresso powder. Combine canola oil, vanilla extract, brown sugar, and sour cream.
Pour wet ingredients in the bowl with the dry ingredients, and stir to combine. Bake the cupcakes for 16-17 minutes.
For the Frosting: 1 cup chopped fresh strawberries 1 TB sugar 8 TB butter 8 oz cream cheese 1 tsp vanilla 2.5 cups powdered sugar 4 decorated chocolate-covered strawberries
Combine strawberries, sugar and water in a small saucepan. Cook until strawberries reduce. Beat together all ingredients until creamy.
Pipe frosting on top of each cupcake, and place a chocolate covered strawberry on top before serving.
