An easy Whole30 recipe for two!

1 T. tomato paste

1/4 t. cumin

1/4 t. chili powder

1/4 t. garlic

1/4 t. sea salt

1/4 t. pepper

1/2 lime juiced

1 T. olive oil

Place the cod fillets in a shallow bowl & add the marinade ingredients. Mix well & ensure it touches all sides of the cod. Set aside to marinate for 15 min. in the fridge.

Place the fish on a parchment-lined baking sheet. Bake for 10-12 minutes at 425 degrees F.

Meanwhile, combine the 4 c. slaw in a large bowl. Whisk together 1/2 c. Whole30 ranch & 1 t. chipotle peppers. Drizzle over the slaw, & toss to combine. 

Divide the slaw mixture between two bowls. Top each bowl with a cod fillet, and extra lime wedges for serving.
