Green Chili Stew

Includes potatoes, corn, and fresh Hatch green chiles!

In a 3-quart pot, heat oil over medium-high heat. Add onion and cook until softened and starting  to turn golden brown on edges. Next, stir in minced garlic for 30 seconds.

Add chicken broth, salt, pepper, chopped potatoes, and green chiles to pot. Bring to a simmer. Add chicken, cover, and let  cook until done. 

Remove the chicken. On a cutting board use two forks to shred the meat. Add it back to the pot. Stir in the frozen corn and let everything  simmer for about 5 more minutes.

Divide between two soup bowls. Serve garnished with fresh cilantro and lime wedges. Enjoy!
