Instant Pot Lo Mein

Ready in just 3 minutes!

1 cup Chicken Broth

1 Chicken Breast

1 TBSP Soy Sauce

1 Clove Garlic Minced

1" of fresh ginger, grated

1 tsp Honey

1 tsp Rice Wine

4 oz noodles

10 ounce bag of frozen stir fry vegetables

Whisk broth, soy sauce, minced garlic,  grated ginger, honey, and vinegar. Pour sauce in the bottom of mini Instant Pot. Break noodles in half, and layer in a criss-cross. Do not stir them in.

Dice chicken into small pieces,  and place on top of noodles. Close lid on Instant Pot, turn valve to SEAL, and press PRESSURE COOK.  Toggle to HIGH, and set timer for 3 minutes.

When timer goes off, use a wooden spoon to carefully release pressure.  When valve releases, open and stir in  frozen veggies. Press 'SAUTE' for 5 minutes,  stir while veggies cook thoroughly.

Divide between two  bowls and Enjoy!
