Lemon Cheesecake Bars
The perfect summertime potluck recipe!
In the bowl of a food processor, crush the 6 sheets of graham crackers into crumbs. Stir the 2 1/2 T. melted butter & 1 T. sugar into the graham crumbs.
Push the crumbs firmly into the prepared pan & bake for 20-22 minutes at 325°F.
Meanwhile, beat an 8 oz. package of cream cheese & 1/4 C. sugar until light & fluffy. Beat in egg yolk, followed by the 1/2 t. vanilla & 1/2 t. lemon juice.
Lower the oven to 300, and bake the cheesecake for 20-30 minutes, until the entire surface is set and not sticky. After cheesecake rests, move to refrigerator for at least 4 hours.
