Lemon Risotto

with Grilled Shrimp

Lemon risotto for two with grilled shrimp skewers.

Thread the shrimp on each skewer. Brush with olive oil and lemon juice, then sprinkle with salt, pepper, and cayenne. Cook the shrimp on each side on a grill pan with olive oil. Set aside.


Cook the onion in melted butter, followed by the garlic.


Now, add the rice and cook. Gradually add the chicken broth while the rice simmers, stirring frequently.


Stir in the lemon zest, then taste and adjust the seasonings. Serve with a shrimp skewer on top.
