Mini Multigrain


Give this healthy breakfast idea a try! Made with lemon and pistachios, this mini multigrain biscotti recipe has the perfect balance of flavors and textures. You'll want it as a healthy snack idea, too!

Whisk together the flours, wheat germ, and cornmeal.


Beat the egg, sugar, and baking powder until pale yellow and fluffy. Add the salt, lemon zest, and vanilla and beat to combine.


Add the dry ingredients to the wet and stir with a spatula to combine. Stir in the pistachios.


Gather the dough into a log, and press it out into a rectangle. Do this on the baking sheet. And bake.


Remove the sheet from the oven and let it cool. Thinly slice the log and place the slices back on the baking sheet. And bake for another 20 minutes.
