A delicious dinner for two with grilled chicken and quinoa.

Place quinoa and chicken broth in a saucepan, then bring to a boil. Lower the heat and cover. Let simmer. Remove from heat and keep covered.


Ready the plastic bags or dishes. Place the chicken breasts in one bag, and sprinkle with salt and pepper. Make the marinade. Pour half the marinade on the chicken and toss to coat.


Chop the vegetables. Place all the vegetables in the bag and pour the remaining marinade on top. Stir to coat. Add all the vegetables to a grill except the scallions. Add the chicken.


Cook everything per side. Add the scallions after the first flip. Divide hot quinoa between plates. Top with sliced chicken and vegetables. Enjoy!
