Small batch recipe without Velveeta
1 T. butter
1 c. half and half
2 cloves minced garlic
1/2 c. grated Monterey Jack cheese
1 1/2 c. grated extra sharp cheddar cheese
2 oz. cream cheese
Stir in diced onion and cook about 4-5 minutes. Next, stir in garlic & jalapeño & cook for 1 minute.
Add flour & whisk, pour the half & half into the pan, & then lower heat. Add half of the cheddar, & then stir. Add remaining cheddar & stir. Repeat with the Monterey Jack.
Finally, add the cream cheese in several pieces, and stir until melted.
