Red Velvet Cake 

A perfect Valentine’s Day dessert for two!

For Two

Beat 1 cup canola oil, 1 cup sugar, 1/2 cup buttermilk, 4 egg whites, 4 tsp red food coloring, 1 tsp vanilla, and 1/2 tsp vinegar  using an electric mixer.

In another bowl,  whisk 1 1/3 cup + 1/4 cup flour,  1/2 tsp baking soda, 1/2 tsp salt  and 8 tsp cocoa powder. Slowly add dry ingredients to wet ingredients, while mixing.

Divide batter between two cake pans, and bake for 25-35 minutes at 350F. Let cool completely on a wire rack. 

Frosting

Beat 8oz cream cheese and  8 TBSP butter for about 45 seconds. Adding 4 cups powdered sugar  one cup at a time while beating. Add 1/2 tsp vanilla extract and  2 TBSP heavy cream, beat again.

Place one cake on dish. Add 1 heaping cup of frosting on top. Spread to edge of cake. Add other cake layer.  Use a spatula to move remaining frosting down sides. Use scraper to smooth sides.

Serve immediately, or store in the fridge until serving. ENJOY!
