SHEPHERD'S PIE

A hearty dinner for two made in just 45 minutes!

 1 T. olive oil

A hearty dinner for two made in just 45 minutes!

 1 LB. ground hamburger

1 1/2 c. frozen mixed veggies

1 T. tomato paste

3/4 c. beef broth

2. garlic cloves

1 T. flour

1 T. flour

Heat a cast iron skillet over medium-high heat until hot. Turn the heat down to medium, add the olive oil and the beef.

Next, add the garlic & tomato paste & cook. Sprinkle the salt, pepper, beef broth, Worcestershire, soy sauce & the flour. Let cook to thicken, & then add the frozen veggies.

Scrape the mixture into an 8x8” baking dish.

Cook the potatoes & let them cool slightly, then use the paper towel to peel off the potato skins. In a bowl, mash the potatoes with the 5 T. butter, 1/2 c. milk and 1/4 t. salt.

Bake on the center rack of the oven for 25 minutes at 400 degrees F.
