Skillet Spanakopita made with crispy phyllo sheets and baked in the oven.

Saute the onion in butter.

Squeeze excess water from the defrosted spinach. Then, stir it together with the ricotta, eggs, feta, dill, salt, and pepper.

Stir in the onion and drippings. Next, scrape the mixture back into the skillet.

Melt butter. Layer a phyllo dough sheet on top of the spinach and brush with butter. Repeat with all layers and finish with a drizzle of butter. Bake and serve.
