MEYER LEMON SCONES

A small batch recipe for two!

In a medium bowl, stir together the 1 1/4 c. flour, 1/4 c. sugar, 1/4 t. salt, 1/4 t. baking soda, & 1 t. baking powder.

Dice the 4 T. butter & add it to the flour mixture. Work the butter into the flour mixture until it's evenly distributed & smaller than peas.

Next, add 1/3 c + 2 T. heavy cream, egg yolk & zest of 2 lemons in a small bowl & whisk together. Pour this on the flour mixture & stir until a shaggy dough forms

Scoop the dough out, place it on the baking sheet, & slice the dough circle into 4 even pieces.

Brush each piece with extra heavy cream & top with lemon slices if you like.

Bake for 13-15 minutes at 400° F.  Whisk together the glaze ingredients. Pour on the scones when they come out of the oven.
