Sweet Potato Toast
Ingredients 4 slices of bacon 1 large round sweet potato 1 TBSP avocado oil 1/4 cup almond butter 4 Medjool dates flaky sea salt, for garnish chia seeds, for garnish
Preheat the oven to 400 and place bacon slices on a baking sheet and slide into the oven on the upper rack.
Wash sweet potato very well, and then using a sharp knife, slice it into 1/2" planks. I leave the skin on.
Arrange sweet potato slices on a parchment-lined baking sheet. Drizzle with avocado oil. Turn slices over to lightly coat both sides.
Bake toasts on the upper rack for 15 min. Flip and bake another 5 min. Check the bacon after 15 min.
Let the sweet potato slices cool on the baking sheet. Wrap them between pieces of wax paper and store them in the fridge for quick breakfasts.
To make sweet potato toast place a slice in a toaster until warm and crisp. Spread almond butter, sliced dates, and bacon, and sea salt and chia seeds.
