CHAMPAGNE CUPCAKES

A small batch dessert that's perfect for Valentine's Day!

1/4 c. oil

1/3 c.+ 1 T. flour

1/3 c. sugar

1/4 t. vanilla

1 egg

2 T. dry champagne

1/4 t. orange zest

Combine the oil, pinch of salt & sugar together in a medium bowl. Use an electric mixer to mix everything together very well.

Add room temperature egg, vanilla, a few drops of almond extract, & orange zest. Whisk this mixture together very well before proceeding.

Finally, sprinkle all of the dry ingredients evenly over the surface of the bowl: the flour, 1/8 t. baking soda & pinch of baking powder.

Mix the batter together very well, & then divide between 4 cupcake liners in a pan. Bake at 350° F for 19-20 minutes.

Beat together all champagne buttercream ingredients: 4 T. softened butter, 1 c. powdered sugar, & 2-3 T. champagne.
