Mini Pineapple Upside Down Cakes made in ramekins, serves two.
Coat the ramekins in butter and sprinkle with sugar. Tilt around to coat the surfaces. Next, melt the brown sugar and butter, then scrape the mixture into prepared ramekins.
Place a pineapple ring at the center of each ramekin and cover the entire bottom of the ramekin with sliced pineapple rings. Then, place a cherry half in the middle ring. Set aside.
Make the cake batter next and divide it between the ramekins. Bake and let cool.
