Start by making the dressing and set it aside.
Slice the nectarine and cook it in melted butter. Tilt the pan, spoon the butter over the nectarine slices, and cook. Remove them from the pan and let them cool.
Toast the almonds in the leftover butter. Then, remove them from the pan to cool.
To a bowl, add the arugula. Add the vinaigrette, followed by nectarines, cheddar chunks, and toasted almonds. Toss and serve.
