Best pumpkin white chocolate chip cookies that are fluffy and bake up with a snickerdoodle crust.

Mix together the butter and sugars. Add the pumpkin puree and vanilla, then stir.

Sprinkle the flour, baking soda, baking powder, and some pumpkin pie spice over the mixture. Stir the dough, and fold in the white chocolate chips.

Combine the remaining sugar and pumpkin pie spice. Scoop out the dough and roll the balls into the spice mixture.
