No, that's not a typo. I really used mashed potatoes to make truffles instead of heavy cream.
And believe me when I say: no one can tell the difference. I served them to many discriminating house guests over the past month. I watched closely for a raised eyebrow, a slight frown, anything! to tell me that you can taste the mashed potato. But, you simply can't.
I'm in love with them. Excuse me while I indulge.
Just 4 ingredients: leftover mashed potatoes, chocolate chips, vanilla extract and a coating. I used chopped pecans, sweetened coconut, cocoa powder and 10x sugar.
Don't make me pick a favorite.
It goes without saying (one would hope) that you may not use leftover mashed potatoes flavored with herbs, garlic, or pepper. We're looking for cold mashed potatoes made with only cream, butter and salt for this recipe.
Mashed Potato Truffles
I really used mashed potatoes to make truffles instead of heavy cream. And believe me when I say: no one can tell the difference!
Ingredients
- ½ cup cold mashed potatoes*
- 1 cup dark chocolate chips
- ½ teaspoon vanilla
- ½ cup of topping for rolling (cocoa powder, coconut flakes, powdered sugar or finely chopped nuts)
Instructions
- In a small bowl, add the chocolate chips. Melt them in the microwave at 50% power, or in a double boiler. Melt slowly and stir often. When they have melted entirely, stir in the mashed potatoes. Add the vanilla. Stir, stir, stir. And stir til you can't stir no more.
- Place the mixture in the fridge to firm up for 30 minutes.
- Pour your rolling mixture(s) in little bowls and have them ready. Take 1 tablespoon-sized hunks and roll between the palms of your hands. Roll in desired topping, then place on a baking sheet and refrigerate until firm.
- They will keep in the fridge for 1 week.
Notes
*You may not use leftover mashed potatoes that contain garlic, herbs, sour cream or excessive spices. I didn't try this recipe with instant potatoes; I used Russet potatoes that I peeled, boiled, and mashed with a splash of cream, milk, butter and salt.

These remind me of an old Maine candy that was recently brought to my attention called Neehams. They're like a Mounds bar like a potato base that's mixed with butter, sugar and coconut dipped in chocolate. I haven't made them yet, but intend to very soon to try it out!

Awesome idea to use up leftover mashed potatoes! I wonder if you could also use sweet potatoes or yams?

Hi, Christina!
Want to let you know that I've just made these a moment ago and it turns out GREAT! I even only used plain mashed potatoes (without cream, butter, and salt) and I used Rum instead of Vanilla extract! They taste and smell sooooo gewd!! And really... no potato hint at all! :)

Memories!! I used to make a similar potato truffle treat way back when a teenager in the 1970's!!!!! That recipe used peppermint flavouring and the truffle is half dipped in melted chocolate. After dinner mint potato truffle! I remember using dessicated coconut for some also. Yum, yum, yum.

My family version of mashed potato candy (passed down from generations):
Potato Candy
Mix mashed potatoes with enough powdered sugar to become stiff like dough (it takes quite a bit depending on how much mashed potatoes you have)
Roll it out flat like a pie crust.
Spread peanut butter across the rolled out potatoes.
Roll up the dough into a log.
Slice the log into small pieces (they are pretty rich)
Keep chilled.
Easy peasy. We loved making these as kids
Mom also used leftover pie dough in a similar fashion:
Cinnamon bites;
Scrape the pieces together, then roll out.
Spread butter across the dough, sprinkle with sugar and cinnamon.
Roll up and then cut into pieces.
Bake on sheet along with the pie until browned.
Also fun and easy for kids to do. (We ate some them raw as well when waiting for them to bake!)

Seriously late to the game here, but have you tried freezing these? I'm wondering how they'd hold up after say two weeks or more. Thanks for the recipe!

What is the instructions listing 1.? It is blank and I am not sure if they recipe was numbered wrong or I am missing an important ingredient.
Christina Lane says
Please ignore it. No steps are missing. IT was a glitch when I switched over to this recipe card. I'm still going through and fixing it. Sorry for the confusion!
