Cook bacon and set aside. Season beef chunks with salt and pepper, then add to the pan with bacon grease. Sear. Add sliced carrot and red onion, then cook.
Sprinkle flour and cook. Add wine, beef broth, thyme sprigs, bay leaf, tomato paste, and garlic clove. Add back the bacon pieces, then salt and pepper. Cook.
Sear onions in butter and olive oil. Cook in beef broth. Pour into a bowl.
Cook mushrooms and stir them into the beef. Then, make mashed potatoes. Top with stew. Serve.
