Potatoes roasted in pesto, and then tossed with pesto again just before serving.
Rinse and scrub the potatoes. Dry and cut the large ones in half.
Add the potatoes and pesto to a sheet pan and sprinkle the salt and pepper. Toss to coat and spread out the potatoes. Roast, then give the pan a shake. Roast again.
When done, add the remaining half of the pesto and toss again. Serve.
