White chicken chili for two.
So, um, I'm from Texas and I don't normally like chili. I know, I know!
I think it's because I like beans so much. Normally, a Texas 'bowl of red' does not contain beans. My Mom doesn't even add beans to her chili.
It could also be because I just don't understand chili without beans...it's a bowl of meat in thick sauce...like, where are the noodles? Or something to eat it with? How do we do this as a society? Please, I need help, hold my hand. This bowl is hot.
Enter white chicken chili for two to save me from a full-on chili existential crisis. It's full of white beans (my all-time fave), green chiles (my one true love), big shreds of chicken in a tangy, creamy sauce that is thin enough to be fully understood as soup and not sauce on a spoon.
Can you double this white chicken chili recipe?
I've doubled this recipe many times to feed my in-laws, and have also doubled it to store in the freezer for a later date. It's fully freeze-able even though it contains sour cream.
Another fun fact about this soup is that my toddler loves it. I buy the MILD green chiles for her, of course, and she seems to love picking out the beans and chicken from the tangy broth (and drinks the broth at the end). Taste the soup before you give it to a kid to make sure it isn't too spicy (and serve it with hot sauce on the table for the adults).
I like to serve this with a small batch of cornbread or crushed blue corn tortilla chips for the top. (I've got big love for blue corn, in case you didn't know...see, I am a real Texan!)

Chili is weird. When we make it I eat mine sparingly on top of Fritos (I'm a vision of health...) because who wants to eat a bowl of spicy meat? I'm honestly just in it for the cinnamon roll afterwards.
Long story short...this sounds delicious and I will be trying it out!

This was a hit last night. I doubled the recipe and used ground turkey. I browned the meat separately and just added it to the chili last. My daughter didn't want any at first due to Halloween candy overload, but after one taste she ate two bowls.

We made this last night and loved it! I've tried other white chicken chilis before and been disappointed in the heavy cumin taste...not with this one, it's a keeper! We added poblanos since we had them languishing in the fridge, and it had a delicious spicy kick!

I don’t like beans period. Instant gag reflex! Anything you suggest swapping in to sub for the beans? Rice? Not sure what I can do to make it heartier with not replacing the beans! This sounds delish!!

I made this (up to the addition of the sour cream). Trying to figure out what to do with it to salvage the ingredients. Drain the chicken and white beans for enchiladas and save the broth for another soup. Despite my doubling the garlic and adding chopped jalapeño, it is flavorless. And I made it in a crock pot so plenty of time for the ingredients to meld.

Um, the thing about making things in the crockpot is that they just sit in their own liquid. No liquid evaporates from a crockpot, like it does on the stove. Also, raw onions and garlic in a crockpot are NEVER going to taste as good as ones sauted in fat on the stove. It is a completely different cooking method. This is a 30-minute chili recipe. Stewing it for hours in the crockpot is like comparing sauted ground beef in a cast iron skillet in oil to boiling beef in water over low heat. It's just not the same.
If you change a recipe, it will not work the same way.

I have a version of this for the slow cooker that is just a can of white beans, 2 chicken breasts, 1 jar of Salsa verde, broth, and a bit of cumin. then add the sour cream on top when serving. it is one of my super easy go to meals.

I make my red chili with kidney beans, yes, lots and lots of kidney beans, then serve it over brown rice and of course with some cheese. I guess instead of chili you could call it red beans and rice!
I will have to give your white chicken chili a try, but leave out the onions (onions are evil) and the chilies. I have to throw maybe some cumin in instead. You have handed me the basics so I can customize it to my taste. Thanks!

Just start to follow Boy do you make me happy we're 2 old people who don't eat much and need small recipes foe things we like. A lot of recipes I find are for 4 and really feed six, I'm tried of reducing them. Thanks a lot.
