Remember those hummingbird cupcakes I made? Well, I couldn’t quite get the flavor of pineapple, coconut, banana and cinnamon out of my head. After several mornings of oatmeal topped with dried pineapple, toasted coconut and cinnamon, I had an epiphany: breakfast pancakes that taste like hummingbird cake!
My sweet friend Rachel of Rachel Cooks is hosting a pancake party. That girl is seriously nuts for pancakes. So, hop on over to her site for my recipe for hummingbird pancakes with cream cheese drizzle.
Yeah, there’s a caramelized pineapple ring on top of these babies. Dig in!
Thanks again for participating, Christina! Can’t wait to try these :) xoxo
These look totally awesome. I love trying new variations on pancakes. I like to think it distracts Hubster from the fact that I make pancakes way more than his beloved waffles ;)
What a fantastic idea!!
I’ve literally never had hummingbird cake before. I know. I’ve heard so many delicious things about it. These pancakes are a perfect saturday morning idea!
i die!
Wooooweee! These pancakes look delicious! I love the cream cheese drizzle!
You’ve done it again, Your Highness ;-)
I think I want breakfast three times a day! Delicious.
Are you kidding me! These pancakes are so creative…certainly would cause anyone to bounce out of bed in the morning!
Holy crap those cakes are cute!
Oh yes!!! Why did I never think of these??? They look fabulous!!!!!
These look amazing! I’m off to check them out!
These pancakes look a lot like dessert. But since you’ve given me permission, I’ll call them breakfast and be ok with that. :)
Holy moly… I need these for my saturday pancake mornings.. yummy!!
Hi Christina: I’d love to see your recipe for basic pancakes for two. I always end up with way too much batter– such a waste.
Hi there! I do have basic buttermilk pancakes for two: https://www.dessertfortwo.com/2010/07/buttermilk-pancakes-with-rhubarb-compote/
Enjoy :)
Thank you!! I don’t know how I missed that.
