Remember those hummingbird cupcakes I made? Well, I couldn’t quite get the flavor of pineapple, coconut, banana and cinnamon out of my head. After several mornings of oatmeal topped with dried pineapple, toasted coconut and cinnamon, I had an epiphany: breakfast pancakes that taste like hummingbird cake!
My sweet friend Rachel of Rachel Cooks is hosting a pancake party. That girl is seriously nuts for pancakes. So, hop on over to her site for my recipe for hummingbird pancakes with cream cheese drizzle.
Yeah, there’s a caramelized pineapple ring on top of these babies. Dig in!

These pancakes look a lot like dessert. But since you've given me permission, I'll call them breakfast and be ok with that. :)

Hi Christina: I'd love to see your recipe for basic pancakes for two. I always end up with way too much batter-- such a waste.
