Chocolate rice krispies treats for two.
I don't often admit my shameful eating preferences, so lean in and listen up. I love Star Crunches. You know what I'm talking about---the round chocolatey crispy things laced with caramel made by that little bitch named Debbie?
Debbie ruins swimsuit season for me every year. I will get her back one day, if it's the last thing I do.
When I was growing up, my house had a serious lack of junk food. I'm happy that my Mama refrained from it for the most part, but I think we all know what happens when you raise a kid without sugar...she goes on to write 3 cookbooks all about desserts.
I'm positive there's a correlation.
Chocolate rice krispies treats:
Anyway, I should really apologize to you for making these chocolate rice krispies treats. They taste just like a Star Crunch (and even more so if you drizzle them with caramel). I'm so shamelessly addicted to them, and worse: my husband is off sugar right now.
What I'm trying to say is, I ate the whole pan. In three days. I convinced myself that they wouldn't freeze well, and therefore, the only logical thing to do was just keep eating them.
And yes, I first made this recipe in a bread loaf pan to make two servings (easy to do if you wanna, just cut the recipe in half), but after one taste, I was like 'NOPE. GIMME A WHOLE PAN.'
I'm the literal worst around homemade junk food.
So, make these as they are written, top with sea salt and dig in. Or, drizzle with caramel (and then sheepishly sprinkle with sea salt because you're a lush and you should be ashamed of yourself. And then please call me and confess so I can feel better about my own eating habits. Thanks).
Love you. Bye!
Have you seen my peanut butter rice krispies treats recipe? Or, my small batch of rice krispies treats?
I also have strawberry rice krispies treats, which would be such a great partner to these chocolate ones!

Chocolate Rice Krispies Treats
Small batch rice krispies treats made with chocolate and sea salt.
Ingredients
- 4 tablespoons unsalted butter
- 10.5 ounce bag of mini marshmallows (5 ½ cups worth)
- ¼ cup unsweetened cocoa powder
- heaping ½ cup chocolate chips
- 5 cups rice krispies cereal
- ½ teaspoon sea salt (optional)
Instructions
- Line a 8x8 baking dish with parchment paper or foil (or spray it very well with cooking spray).
- In a large pot, add the butter, marshmallows and cocoa powder. Turn the heat to medium high, and melt while stirring continuously. The mixture should become one sticky, gooey mess. Delicious!
- Stir in the chocolate chips until melted.
- Add the rice krispies cereal to the pot one cup at a time, and then stir, stir, stir. It'll be sticky and messy. You're doing it right!
- Press the warm gooey mixture into the baking dish, using buttered hands to flatten it evenly.
- Sprinkle the sea salt on top, and then let rest for 2 hours before cutting (yeah, right).

I was I complete heaven my first and only time just a few weeks ago. My future ex-boyfriend just pulled out of the driveway. I looked up this recipe so I could insure he’d definitely bring back something wrong. Got to love a Narcissist.

Is this regular rice crispy cereal or chocolate/cocoa flavored?
Christina Lane says
Plain regular rice crispies.
Hannah Lindsay says
I'm making these tonight! Drizzled with some dulce de leche. Yum!

Just made these. OMG, such chocolate-y goodness. Next up, I'll be making your little banana bites. They also look delicious too. So glad I found you.
Amanda says
These taste delicious! But after making them, medium high heat seems way too high. The flavor was wonderful, but they were rock hard. Heating over low should prevent this.
Christina Lane says
Oh no! Let me update the recipe, because they should definitely not be any harder than a regular rice crispy treat. Did the mixture bubble on you? It shouldn't boil or bubble at all. I'm so sorry this happened to you :(
Cara says
I had the same problem: Delicious flavor, but rock hard, and I cooked them over medium-low heat. With great difficulty, I used my razor-sharp Shintoku knife to cut them into one-half inch cubes. They make a tasty treat, but I don't understand why they are so hard.
Christina Lane says
This is blowing my mind. This recipe made it through 3 rounds of recipe testing in 2 different kitchens. Are you measuring correctly? Do not heap the cereal in the cup. Maybe increase the butter to 6 tablespoons? They should have the consistency of the store-bought treats, firm but easy to bite through. Are you using cocoa with sugar in it? It should be unsweetened.
And I also just want to say that this recipe has been made my many people successfully, so there has got to be a common denominator between the 2 failures. The recipe should not bubble or boil on the stove top. Did it for you?

I'm curious as to the flops as well. I'm actually going to point them blame as to the chocolate chips they used. Some are labled as "Chocolate Flavored" and don't melt well. I experienced a similar issue with my last batch of Christmas Crack. The topping was hard as a rock.
Christina Lane says
I think you're right, Justine. I always use high-quality real chocolate chips, but some brands are bolstered with food additives. These additives prevent the chips from melting in a chocolate chip cookie, which is fine, but when we actually want to melt the chocolate, it won't! Thanks for chiming in :)

Oh, heck yeah. Next grocery trip will include some rice krispies and marshmallows. I've dipped or drizzled regular rice krispies in chocolate before but it never occurred to me to add chocolate to the marshmallow mixture!
