What is s'mores dip?
Ok, you know what s'mores are, and you know what a dip is, so you're wondering how you turn the campfire treat into a dip? Smores dip is a layer of chocolate that is baked in the oven until melted, then topped with marshmallows that toast at the same time as the chocolate melts. Do you follow me on this? Everything goes in the oven at the same time! A layer of chocolate chips topped with a layer of marshmallows, baked until melted and golden. To serve, you scoop it up with graham crackers, because that's the only thing missing from the s'mores equation.
And if you're still scratching your head on what a s'more is: a s'more is a classic campfire treat you make when you're camping in the woods and only have a fire with which to cook. A marshmallow is roasted on a stick over a campfire and then placed between two graham crackers with a piece of chocolate to make a sandwich. The heat from the marshmallow melts the chocolate, and it's a gooey, sticky mess of incredible flavors: smoky toasted marshmallow, melty chocolate, and crisp graham crackers. Another name for s'mores is HEAVEN.
S'mores Dip Ingredients:
- Chocolate Chips. Your favorite chocolate chips will work here. The ones you use for my small batch chocolate chip cookies are perfect! Either dark or milk chocolate chips are fine.
- Marshmallows. Use large marshmallows, snipped in half, for the look you see in the photos, or mini marshmallows for a fun, bubbly appearance. The size of marshmallow you use do not effect the baking time, so you can even mix the two.
- Graham Crackers. I like dipping graham crackers into this smores dip to be authentic, but you can use wafer cookies, crispy sugar wafers, pretzels, or anything else your heart desires.
How to make s'mores dip:
- Gather your ingredients: chocolate chips and marshmallows. Have your dip scoops of choice, ready (graham crackers, cookies, or pretzels).
- Preheat the oven to 450-degrees Fahrenheit.
- In a small cast iron skillet (I'm using this 6 inch skillet), add the chocolate chips, and spread them into a single layer.
- Snip large marshmallows in half, and place them sticky side down on the chocolate chips, in a single layer. If you're using mini marshmallows, just scatter them on top evenly.
- Slide the skillet into the oven carefully, and bake for 7-9 minutes, keeping an eye on the marshmallows.
- Remove the skillet from the oven when the marshmallows are toasty golden brown.
What to dip in s'mores dip:
Obviously, graham crackers! But you can buy gluten-free graham crackers and make this a gluten-free dessert, too! Other great dippers are vanilla wafer cookies, crispy sugar wafers, or salty pretzels!
S'mores dip recipe tips and tricks:
I have heard from a few people saying this recipe method didn't melt your chocolate chips fully, or the chocolate was hard. Read below for a method on how to prevent this from happening a second time:
The primary reason people struggle with this smores dip recipe is that the chocolate seizes and hardens, which is caused by it getting too hot. So, if this recipe isn't working for you, check your oven temperature and bake the dip for less time. You may even lower the oven temperature by 25 degrees. If the marshmallows don't toast enough for your liking with these alterations, use a culinary torch to toast them. That's a link to the exact torch I use in my kitchen.

How do I reheat smores dip?
If you have leftovers of this smores dip, first, let me congratulate you on showing an extreme amount of self-restraint. I have none, but I'm happy for you! Leftovers are tricky with this recipe because marshmallows melt over time. They're just made of sugar, and sugar melts in the presence of any amount of water. You can cover the melted chocolate in plastic wrap and store on the counter and room temperature. Before serving again, top with more marshmallows and broil in the oven until they're toasted.
How do I preserve smores dip?
Like I mentioned above, marshmallows melt into sugar syrup over time. To preserve s'mores dip, store covered at room temperature, and add fresh marshmallows before toasting and serving again.
Can I make S'mores Dip in a glass pan?
Yes, absolutely be PLEASE READ THIS: You're going to need to lower the oven temperature to 350 to bake this smores dip in a glass pan instead. Lower the oven temperature, and keep an eye on your marshmallows while it bakes for a longer amount of time. Remove from the oven when the marshmallows are golden brown.

Love the idea of s'mores dip! I tried it the other day and I loved to dip the graham crackers instead of making a mess! I didn't have a cast iron so I did a water bath with a heavy rimkin, to make sure the choc melted. The marshmallow texture was hard like when you microwave them :o( was not thrilled with the texture and you had to eat it immediately or the whole thing hardened. Luckily it's summer so I tried this again but bbq'd the marshmallows and plopped them in the pot of melted chocolate! Yum.

I would recommend pre-melting the chips. Once my marshmallows were nicely toasted - my chips were still solid. I did this in a larger skillet for 4 tween girls during their glam camp out in my TV room. They all raved but said it needed something fresh like raspberries, strawberries or bananas ... interesting!

Did you let it set after pulling it off the fire? The residual heat from the skillet will melt the chips. I'm not sure how well it works when the recipe is quadrupled, however. Raspberries sound awesome!

I used a 12" cast iron skillet , cooked until the marshmallows were golden but the chocolate didn't melt. Oven was at recommended temp. Why do you think this happened?

Did you double or triple the recipe to make it fit in a 12" skillet? Or did you use the same amount?
The skillet needs to sit once it comes out of the oven to melt the chips.

I doubled the recipe and I let it sit out after cooking to set. Not sure why they didn't melt. I tried the recipe twice.

Did anyone have any issues with it wanting to harden as it cooled? Im planning an outdoor October cowboy themed party for my 2 yr old I wanted to make this but I was afraid that after hitting the cool fall air it would just harden and be a mess. Any suggestions?

I was just reading through the comments on this, I usually do just to see what others thought of the recipe, and since many said that the chips weren't melted couldn't you heat the skillet in the oven while it's preheating? This was the chips have time to melt and the marshmallows don't get hard after taking out of the oven?
